Chemical compsition of fruits of three eggplant (Solanum melongena L.) cultivars

Results referring to the chemical composition and energetic value evaluation of three aubergine cultivars (‘Black Beauty’, ‘Solara F1’, and ‘Epic F1’) cultivated in an unheated plastic tunnel are presented. They point out that all the analysed cultivars had the desired chemical composition. The experiments showed that ‘Solara F1’ was the most valuable cultivar with regard to the chemical composition.
