The experiment was carried out with the aim of comparing three forms of
tarragon: Russian, French and that cultivated in Poland. The studied forms
differed in their morphological features, herb yield and essential oil
composition. Analysis of the essential oil showed that the composition of
essential oil is different in each forms. Sensory analysis also revealed
that the form cultivated in Poland is characterized by a strong, specific
flavour, differing distinctly from the other ones.
