Metabolism of sugars and ascorbic acid in celeriac slices

Low molecular sugars (total, reducing, and sucrose) and ascorbic acid level were determined in celeriac slices during their ageing at room temperature. A significant decrease in sugars caused by sucrose decomposition was observed. No correlation was found between enhanced "wound respiration" and sugar metabolism. The ascorbic acid level did not change during ageing of the slices. The carbohydrate metabolism in starchy and non-starchy tissue slices is discussed.
